About This Dish
Flat rice noodles topped with a savory pork or chicken tomato-based sauce, served with a small bowl of clear broth on the side. Originally from the Shan Hills, this dish has become one of the most popular noodle dishes across the country. The dry version has minimal liquid so the noodles absorb the rich sauce.
Shan noodles come from the diverse Shan people of eastern Myanmar. Served two ways — "wet" (in broth) and "dry" (with the sauce poured on top), the dry style is the more iconic. The Shan people brought this dish to Mandalay and Yangon where it gained nationwide popularity.
How to Eat This Properly
IMPORTANT: Mix thoroughly before eating! The noodles are placed in the bowl first with the sauce poured on top. Toss everything together so every strand of noodle is coated. Add a little chili oil and pickled greens for the best flavor balance. The small broth on the side is for sipping between bites.

Where to Find It
Shan noodle shops are everywhere — look for "ရှမ်းခေါက်ဆွဲ" signage. They usually serve from morning until early afternoon. Particularly good in Mandalay and in Shan State itself.
